Camels don't have steering wheels. Rather than using a bit and halter like with horses, you stick a wooden peg through their noses and tie a rope onto that, and use that turn them left or right. The saddles are basically a rectangular wooden frame about 18 by 36 inches that just sits over and is held in place by the two humps, and you sit between the humps. I've only been on a camel once, and a horse twice, so I'm not exactly an expert on either, but my first impressions are that I'd much rather ride a camel than a horse.
